Grand Vin de Bordeaux

Yield: 30 hl/ha, before selection ofthe three wines: Château Smith Haut Lafitte, Les Hautsde Smith and Le Petit Haut Lafitte.
Blend: 90 % Sauvignon blanc, 5 % Sauvignon gris, 5 % Semillon
Vinification:grapes are hand-picked into small crates and pressed in an oxygen-free environment (to preserve the aromatic potential of the berries) and fermentation takes place in French oak barrels (50% new oak) after a cold settling of the juices.
Ageing 12 months on the lees with bâtonnagein barrels (50% new and 50% used for one previous vintage) made at the Chateau onsite cooperage.

Blend: 62 % Cabernet sauvignon, 30 % Merlot, 6 % Cabernet franc, 2 % Petit verdot
Vinification :of whole berries in small wooden vats at 28°C, extraction through manual pigeages.
Ageing:18 months on lees in French oak barrels (60 % new) made at the Château onsite cooperage, one racking only and then ageing adjusted for each wine.
